The Breakfast of Future Champions

By Coleen Christie

I love breakfast. It's my favorite meal. There are foods I prefer, but I can eat anything for breakfast - pizza, leftovers, whatever. I do believe it's the most important meal of the day. Experience has taught me that - especially when I run or work out. I understand that some people are too busy to make breakfast, but going without is not an option. Even when I used to do our morning show, waking up at 3:30 AM I would rush out the door with breakfast in hand. This week I helped serve up eggs, sausage and pancakes at the annual Kidsafe Breakfast. The Kidsafe Project gives inner city children a hot breakfast, a place to go, and fun things to do during spring break. These are kids who might otherwise fall through the cracks while school's out. Every year I'm impressed by how well mannered, sweet and talented these little guys are. And every year it breaks my heart when we run out food -- and not a single child complains. Thank you to everyone who volunteers and donates time or money to make the program a success. If you find yourself too rushed in the morning to eat, here are my top five choices for breakfast. Try to get some protein with your carbs. You'll stay full, longer. I've also posted a recipe for you. 1) Steel-cut oats or large flake oatmeal with flax seed and egg whites mixed in. Time to make:15 minutes, but you can make a few servings and microwave the next day. 2) Scrambled eggs or egg whites and Cheese Whiz (Don't knock the Whiz.) Time to make: 3 minutes 3) Sprouted Grain toast with Whole Foods brand chunky peanut butter (Peanut Butter is my favorite food and I think this one is the best) Time to make: 3 minutes 4) Bite Sized Shredded Wheat cereal or Kashi "Go Lean" cereal with skim milk. Time to make: 30 seconds 5) Protein shake with ground flax seed and blueberries. Time to make: 1 minute
